Iris germanica, Iris florentina, and Iris pattida
Also known as Iris, Flag Iris, Pale Iris, and Orris Butter
A lot of work goes into harvesting orris. After three to four years of growth, the roots are dug up and left to dry. Dried orris root takes on a hugely floral, sweet smell that is most often compared to (Parma) violets.
The root has been used in perfumes for years – not just for its own smell, but for its ability to bind and enhance other scents.
The orris root contains essential oils, flavanoids, tannins, and starch.
Orris Root rare spice with a unique and enigmatic aroma, reminiscent of violets. It was a common ingredient in European cooking for thousands of years, but its culinary popularity is now eclipsed by its use in perfumes. It’s also used to flavour gin.
Orris Root powder is still a common ingredient in Moroccan cooking, particularly in the best Ras-el-hanout spice blends.
Our Iris roots are cultivated in the Apennine Mountains of north-central Italy. They are harvested by hand every August, before being peeled then dried.
It’s particularly good as an addition to spice blends. Its awesome floral aroma enhances tajines or braised dishes, as well as syrups and cream-based desserts.
